I’m back with a non baby-related post… can y’all believe it?! Now that maternity leave is over and we are slowly easing out of quarantine life, I’m hoping to get back to blogging on a more regular schedule. Now, I’m no food blogger but I’m super excited for today’s post. I’m sharing an incredibly easy and equally delicious summer watermelon salad recipe that you must try!
Let me start off by saying I take no credit for this recipe. Ryan actually found it on CountryLiving and made it for our Mother’s Day picnic in the park. I was super impressed and I decided to make it four our Memorial Day get together and it was a hit! I am officially obsessed and think it’s the perfect summer dish. It’s so easy to make and healthy as well.
Ingredients List:
- 1 baby watermelon
- 1/2 cup fresh mint
- 1/4 cup red onion, thinly sliced
- 12 oz. cherry tomatoes, halved
- 2 tbsp. olive oil
- 2 tbsp. fresh lime juice
- 1 tsp. pure honey
- Salt and black pepper
- Crumbled feta
This salad is SO simple to make! Just cut the watermelon into small triangles and top with red onion, tomatoes, and mint. Mix the olive oil, lime juice, honey and salt & pepper in a small bowl and drizzle over salad. Top with the crumbled feta cheese and enjoy!
